Banana pancakes, sweet potato pancakes, pumpkin pancakes–too many options! I love to experiment with different ingredients for both waffles and pancakes, but you can’t forget your morning protein!
For today, I made some gluten-free protein pancakes. I used coconut flour (yum!), ground flaxseed, vanilla whey, eggs, coconut milk, a little cinnamon (metabolism buffer), and for a boost of energy, I threw in a teaspoon of maca root! Topped with sugar-free preserves and blackberries.
Could’ve done a better job flipping this big cake, but it came out just as tasty! Makes one large serving.
